Ingredients:
8 oz Fresh Macaroni pasta
½ lb Bacon (cooked and diced)
2 Jalapeno’s (diced)
3 Tablespoons of Butter
1/3 Cup of Flour
3 Cups of Half & Half Cream (warmed up)
2 Cups of Cheddar (grated)
1 Cup of Pepper Jack Cheese (grated)
1 Cup of Mozzarella Cheese (grated)
2 Teaspoons of Salt
1 Teaspoon of Pepper
½ Teaspoon of Liquid Smoke
½ Teaspoon of Dry Mustard
½ Teaspoon Smoked Paprika
Topping:
¾ Cup of Panko Crumbs
¼ Cup of Parmesan Cheese (grated)
3 Tablespoon of Butter
Method:
- Cook pasta until al dente – and cool down
- Cook off bacon until crispy – reserve
- Dice jalapeno and reserve
- In a medium size stainless steel pot, on medium heat, melt butter
- Once butter is melted add flour and cook for 5 minutes until flour taste is gone
Slowly add warmed up half and half and stir until flour has dissolvedSlowly add each of the cheeses to the cream mixture and whisk until combinedAdd the spices and then season to taste with S+PCool the sauce down and add the macaroni to itPut the macaroni and sauce together into a roasting panTop with the cooked bacon and diced jalapenoCombine all the topping ingredients and top the roast pan of mac and cheeseBake at 365 F for 35 minutes or until top is brown and cheese sauce is bubblingCool for 10 minutes and then serve
